Ingredients:

  1. 1 cup dried lentils, rinsed and drained
  2. 1 tablespoon olive oil
  3. 1 onion, chopped

  7. 1 teaspoon ground cumin
  8. 1 teaspoon ground coriander
  9. 1/2 teaspoon smoked paprika
  10. 6 cups vegetable broth

  12. 1 cup chopped kale or spinach
  13. Salt and pepper to taste
  14. Fresh lemon juice (optional, for serving)

Instructions:
