Baked oatmeal are one of my favorite wintertime breakfasts. It’s feeding, healthy and full of good things. Who doesn’t love “trail mix”? It’s filled with nuts, dried fruits and sometimes dark chocolate chips. She had the idea to combine all these delicious things by creating this oatmeal. It’s the best of both worlds, oatmeal and “trail mix”, yummy!
Ingredients (6 Servings)
2 cups Oatmeal (not quick oats)
¼ cup Brown sugar
3 tbsp Vegan Pro – Maple Vanilla
1 tsp Baking powder
1 tsp Ground cinnamon
⅓ cup Dark chocolate chips
¼ cup Unsalted peanuts
¼ cup Unsalted sunflower seeds
¼ cup Dried cranberries
¼ cup Raisins
1 cup Plant-based milk
2 tbsp Vegan margarine, melted
1 tsp Vanilla extract
1. Start by preheating your oven to 350°F (180°C) and line an 8×8 inch (20×20 cm) pan with parchment paper. Reserve.
2. In a large bowl, add all the ingredients together in the order listed. Mix.
3. Pour into the prepared mould. Bake in the preheated oven for 35 minutes.
4. Let cool completely before cutting into 6 parts.
Topping: Top each part with plant-based yogurt or natural peanut butter, if desired.
